I made my cuban sandwich with sliced emmenthal, dill pickles (gherkins), sliced skinned chorizo (no ham in the house), and pot-roast pork marinated and cooked with homemade #salsamojo – juice of lime, juice of a satsuma, 1 tsp each dried oregano, dried mint (the fresh mint in the garden isn’t up yet, that would be amazing here), ground cumin, smoked paprika & salt, 8 cloves garlic (peeled), 50g olive oil, all whizzed until smooth’ish in the blender – until tender (5 hours at 150C, sealed in pot). ????????????????????????
