It will no-doubt become an essential preserving handbook, filled with Pam’s know-how that has created not just confident home jam & marmalade makers, but fuelled many many small artisan producers who owe their start and success to Pam’s guidance and teaching.
I particularly like the background flavours and aromatics in Pam’s recipes, whether it’s the hint of lemon in Pam’s toffee apple curd, honey in a grapefruit marmalade, sweet pickled apricots with rosemary, and ground ginger in her beetroot jam. A book full of inspiration and wise preserving guidance.
