Spent yesterday morning at @michaeljamesbakes new bakery for Alla @wolfinkitchen extraordinary @dairyflatfarmdaylesford project (more on this tomorrow), working with Nik @nboskell experimenting/crafting new ferments with flours from @powletthillfarm @wholegrain_milling and James Fisher @rolling_stone_mill as well as some in-house @wolfgangsmockmill fresh milled flour. The mighty @salvaindustrial_bakery supplies both the oven and gentle prover retarder setup, and there is a palpable feeling of magic in the air. What a location, very green and beautiful right now, surrounded by a farm that will supply extraordinary produce from rare seeds and cuttings. Much more later, one to visit soon.
