Sourdough dreams do come true. When I was in Tokyo last May I wanted to teach a sourdough course as interest in naturally fermented bread is just beginning to grown in Japan, and it’s a good feeling to be one of the early bakers teaching people though you can imagine it gathering pace rapidly…and it has.
Two students from the class, Yukiko Tamaki (who has pics of her baking on her iPhone) and Tomoko Miyazawa (her sourdough loaves were on her iPad), came to the scone masterclass and wanted to tell me about the success they had using what they learned at my sourdough workshop.
Tomoko originally came to my sourdough workshop because her mother liked sourdough bread and she wanted to learn how to make it for her, using the starter I gave her. Tomoko’s mother was so impressed that she took some of my starter and now bakes loaves every day.
