6 meringues
100g peeled and cooked chestnuts, I used #merchantgourmet
40g castor sugar
5g vanilla extract
30g soft unsalted butter
10g spiced rum, I used #oakheartspicedrum

Purée the chestnuts and sugar until smooth then beat in the vanilla, butter and rum. Pipe this over the meringue.

100g double cream
10g castor sugar
15g spiced rum

Beat until just thickened then spoon onto the chestnut mixture. Chill then serve.
