Saddened to learn Japanese culinary expert Richard Hosking has died. Professor Emeritus at Hiroshima Shudo University, author of “A Dictionary of Japanese Food” (1996), “At the Japanese Table” (2000). Richard was the acknowledged authority on Japanese ingredients, always helpful.
