Sad to leave Yawatahama after our @yawatahama_marmalade_festival @marmaladeawards workshops using #iyokan fit a exceptionally glowing reddish marmalade that has the tang of a tangerine with the sweetness of a mandarin. The peel is tender and the jelly set rather pleasing (as it’s a fairly low-pectin citrus). Have arrived in Hiroshima this evening, where I’ll be preparing more Iyokan marmalade tomorrow with workshops on Tuesday at #aohatajamdeck.
