Perhaps we should bake Colomba doves ???? all year round, as a beautiful gift in this time of such conflict and anguish for many people?

This #colombadipasqua was sent to me by Simone Conti at @tildeforno in Italy. Simone started baking 12 years ago at @e5bakehouse in London, back in 2007, and in a note Simone wrote, when it began it “was a hands-on sharing project started with just an oven, a few passionate people, and a couple of textbooks on bread. ‘The Handmade Loaf’ was essential to us’”.

Well if we take the title of my book as a metaphor then The Handmade Loaf is essential, or at least enlivening, to all of us. A loaf made by hand, nurtured thoughtfully, baked carefully, eaten with gusto or calm depending on our situation. That loaf means so much to so many people.

And here we have a beautiful sweet #colombadipasqua baked in the shape of a dove. The subtle flavours combine into one remarkable loaf. Delicious, utterly delicious.
