Panettone practice for Christmas, inspired by the brilliant #panettone on @gankimpoh’s Instagram feed. I’ve dipped into #panettonelievitomadre making over the years (even taught it at @prahranesntl in 2007, the class went on late into the evening) but today, having returned to coaching/training chefs and working bakers, I’m able to get more into advanced details that don’t usually translate easily for the home cook. Especially techniques like complex #panettoneartigianale making where you’re after a highly bubbly crumb and feather like softness to boot from a sourdough starter. And you know, there are bakers out there who could do with selling their carefully crafted panettone this Christmas #supportartisans.
Here, I’ve got lots of “this can be better and more inspiring” thoughts and changes already in my head. So this is my new prototype V1 to work on.
