Met with Stacey @morningtoncrescenttokyo and finally got to got to @bricolage_bread_and_company, late on a Sunday afternoon (4pm) and very busy. The food and the bread that I ate were good, not fiercely dazzling but fascinating that it’s all baked in-house in a fairly expensive part of Tokyo with a large well-equipped bakery setup (saw some pavailler kit) and a separate viennoiserie laminating area). Stacey’s @morningtoncrescenttokyo is the home to great hands-on classes on the sort of old British baking we don’t really see in the UK very much.
