It’s quarter past 11 in Tokyo and I’m sitting in on a Victoria Sandwich baking class taught by Stacey Ward @morningtoncrescenttokyo, who for the last years has been teaching old rare British baking recipes to a huge following of Japanese cooks fascinated by the old ways and curious tweaks used in regional British baking. Her classes sell out almost as soon as they’re announced, and the rarer the recipe the faster the bookings come in.
