I’m possibly the last chef to write about what a complex and complete work the @magnusfaviken’s #thenordicbakingbook is, published by @phaidonsnaps, with the book&co having just finished a big world tour with their vast heavyweight compendium dedicated to the baking of the Nordic region.

Photographing and writing the book while he travelled through home kitchens and bakeries, Nilsson has put together a huge – I’m guessing nearly complete – collection of the recipes, lores and ways baking has developed, warmed and soothed the people he met.

The breads and other baked things are simply photographed on a plain background, a very clean and graphic way to capture baking and one I’m rather fond of. These shots are interspersed with pictures of the people and places that every baked thing he captured has a relevance to.

If you want a complete book of baking that will transport you beyond the ubiquitous Swedish bun then this is the book for you. Hats off to @mimiterragni for commissioning the series, beautifully printed in Italy, and thanks to @fiona_c_smith for sending me this copy. Funnily enough, it’s 15 years last month since I first met Fiona just as I was setting off for Scandinavia and northern Europe to write #thehandmadeloaf, so this book resonates for me in many many ways.
