Here once more at @theprovidores, @chefpetergordon’s still brilliant restaurant in Marylebone High Street, went when it opened in 2001. It was one of the first food places to start rekindling #marylebonevillage. I’ve bumped culinary chac-cha’s with Peter over the last few decades, so can say with some confidence that there is so much that’s assumed ever-present in cooking style today that we owe to Peter’s influence, that just didn’t happen back in the early 90s, whether it was on the plate or in the restaurant (like opening a restaurant The Sugar Club in #allsaintsroad Notting Hill in 1995, albeit as chef rather than owner). I even worked at The Sugar Club for a flash. Peter was adding vegetable purees and grains to dough (that was going on but is wasn’t a thing-thing), or taking everyday Thai store-cupboard ingredients for a menu without trying to make it Thai or British. Fusion was a catchy term but possibly oversimplified the cooking he was breaking through with, it wasn’t disparate food traditions fused together, much more the way an artist will paint using light and colours from different locations combining memories and imagination. Before 1995 I remember eating his food (and asking him for work) when he was at Green Street Club (long closed) probably in 1994, (went there by chance with @marcquinnart). And stayed until late just to say hello to Peter after he appeared from the kitchen. So looking forward to today.
