Getting ready for tomorrow’s sold-out @marmaladeawards demonstrations in #Yawatahama #Japan ahead of the start date for accepting entries for the @yawatahama_marmalade_festival 17 February 2020 (with the final judging and festival on 16 – 17 May 2020.

Hugely excited that for these demonstrations I’ll be using one of the most famous citrus fruit connected to Ehime: the #iyokan #伊予柑, named after Ehime Prefecture which was once called “Iyo-no-kuni” or “Iyo Country”.
????
The flavour of the Iyokan is tart and bright, somewhere between a mandarin and a tangerine, and as these were only picked a few days ago the pith is still thick, firm and full of pectin. I feel very lucky to be able to celebrate this extraordinary Ehime citrus at these marmalade making demonstrations. I have kept the natural bitterness intact as I think the bittersweet flavour is an essential part of marmalade.
