Frilled lasagna pasta known as #lasagnariccia is what I grew up with in Australia, though not in the classic Naples way: no béchamel, an intense tomato sauce, sometimes sausage and ricotta. The way the brilliant chef @karen_martini does/did at @mrwolf_pizza in #stkildabeach #melbourne.

Mum in her rebellious way would add the béchamel, cheddar cheese, field mushrooms Dad would pick from cow paddocks out near the old Rowville #driveinmovie cinema, and a ragu she’d have simmering away.

So tonight it’s lasagna alla mamma washed down with my favourite #bloodymary, per glass: 2 jiggers each of vodka and #amontillado sherry, 1/2 tsp grated fresh horseradish + a few shakes of @tabasco_uk, celery salt, #worcestershiresauce, stirred with ice cubes and topped with tomato juice
