@thechickensoupproject the chicken is optional because…maybe all you have is an onion, potato and spices. So that’s my “cream of chicken soup”: no need for cream or chicken, but a pot load of flavour.

Chicken is optional, and arguably unnecessary for flavour here. No need for cream, butter or milk. It’s completely delicious just in its bare dairy-free simplicity.
