Empanada @goodfoodau fillings, part 1: for a #vegetarian filling there is this #vegan side dish of Zucchini w Chillies, Olives & Fresh Beans (Empanadas de Calabacita) I’ve used here, paired with refried black beans plus a cheeky sprinkle of black sesame. p.s. To #veganize the crust replace the butter with half that weight in oil, and leave the yolks out (the water and gluten in the wheat flour will make it fairly stretchy) or use 2 tsp liquid lecithin instead (it’s the lecithin naturally present in the yolks that help the dough stretch).
