Bought back some Japanese-grown rice from Shikoku Rice Company based in Takamatsu Kagawa Prefecture, Shikoku from Tokyo last week (awarded “special A” class by www.yoshimoto47shufuran.com, the third highest taste ranking for rice by the Japan Grain Examination Association). The island of Shikoku is where the Japanese Festival of Marmalade is held. The shop I bought it from specialises in produce from Kagawa Prefecture is at 2 Chome-10-1 Yūrakuchō, Chiyoda City, Tokyo 100-0006.
Now I’m not a rice expert so to me it’s tastes like very lovely rice, cooked in a Japanese style which combined washing, soaking, draining, a semi-hard boil/simmer with water then steamed switched off in the pot: using 200g dry rice to 240g water to boil with after draining.
