Back in 2003 we did a double-date with @st.john.restaurant and @thehestonblumenthalteam to look at sourdough in Paris, with a spot of dinner (thank you Trevor) at @alainducasse @plaza_athenee with @justingellatly & @chefjocky @gordonramsayrestaurants.
The reason for the trip for me to show Fergus and Trevor the sort of bread I had in mind for St John Bread and Wine, and my reasoning for wanting it to be centred on small-milling, local grain and so on. Now in 2003 the internet was still dealing in kilobytes, mostly, no photos possible online, no affordable digital cameras, no camera phones. So to show everyone my favourite organic sourdough in Paris – back then Le Pain Au Natural in Place d’Aligre, now @pain_moisan – we had to go to Paris. Now Instagram does all the work for you.
