Aubergines in a tamarind tomato honey sauce: very impressed with the first recipe I’ve cooked from @sabrinaghayour’s @octopus_books_ alluring new #vegetarian book “Bazaar”, particularly because there are so so many recipes that you think, yep, I CAN make that and WILL make that, so many recipes seem to fit into easy lunches or quick dinners.
Like this very quick (30 minutes it took me) dish of seared aubergine slices in a great quick tomato and onion sauce, heady with garlic, tamarind and cinnamon (I popped a sliced red chilli in too). Huge flavour without requiring the whole spice shelf to get there.
