At a friends yesterday, looking at her copy of the late great #TessMallos’s “Middle Eastern Food”, first published in 1979, a brilliant useful book that, unusually for the time, didn’t dodge unusual ingredients or complex methods, or gloss-up bare simple dishes. Reflecting back on what a mature cookery book it was for that time, and about all the small family run restaurants in melbourne from different immigrant communities that helped with it.
