Andaman sea sourdough, an 18 hour fermented 100% sourdough loaf made with organic wheat flour, stoneground organic buckwheat, Andaman seawater and only the salt that water contains. Bringing the crystal clear tropical water directly into the sourdough for a much more complex flavour and a livelier fermentation. It’s funny how we fear seawater while we strip it of fish, and happily consume all manner of processing chemicals and pesticides in the name of cleanliness. Bread from the sea, that’s what I want.
