And now a word from your friendly oven guru: if you want to save you back from injury and produce consistent loaves in your artisan bakery, get an oven with an integrated setter loader, brilliant steam control, with strong even heat distribution top and bottom.
Have been giving this advice for decades now, honestly, you put all the work into the doughmaking and fermentation, so don’t muck it up with a sub-par oven. Get that sorted and it will be the best investment you can make in your baking quality, speed and throughput. Bake more bread easily, and more consistently.
