A world beyond Seville oranges: though I’ll always be enamoured by the startling bittersweet aspect to #sevillemarmalade that we champion at the @marmaladeawards I have been pushing for more recognition of the hundreds (thousands maybe) of citrus varieties around the world. There are just over 200 different recognised varieties in Japan alone, and if you were to add to that varies from China, Korea, and the vast regions of India, Pakistan, South America, the numbers are beyond my comprehension. So do experiment with different citrus varieties whenever you find them. These fruit are called #shishiyuzu and reminded me of the lemons that @rowleywrites had posted on Twitter with the gnarled skin. I bought a jar of the marmalade to try.
