A respected old Japanese “side

A respected old Japanese “side dish” shop called Nakanoya, selling Tsukudani – ingredients simmered in soy sauce – like clams, eel, tuna – together with spices to produce gently healing foods to be served alongside your meal. Was charmed by the smile of the 96 year old grandmother who runs it and guides the preparation of the foods.

There is a very moving South Korean film that came out last year, Notebooks From My Mothers Kitchen 엄마의 공책 about a woman who runs a side dish shop as she develops Alzheimer’s, drawing parallels between the loss of memory both as an individual and as a society.

I tasted the fermented soy beans, looking dark with a complex sweet flavour. I do recommend going with a guide like Chiaki @kushimotochiaki, it opens up the area so vividly.
