A fantastic group of artisan bakers who I admire from from all around Spain and some even further afar joined me thanks to @salvaindustrial_bakery, Guría Flour, @vanrooymachinery and @theloafbakeries to salute the baking talent today in Spain.
We workshopped new baking techniques using @salvaindustrial_bakery’s pretty awesome kit of ovens, mixers, retarder-provers, and experimented sourdough fermentation ideas using Guria’s reliable flours, as well as discussed the issues facing independent bakers today.
It was COMPLETELY INSPIRING, and especially magical when students and apprentices started learning shaping techniques from some of Spain’s finest bakers. Watching skills passed on in this way was mightily cool. Brilliant work, all credit to everyone who joined us.
