Pangotta baked today at @amanpuri Phuket, a long 2-day chilled rise and an hour-long baking time to get that crust full of crunch. Thanks to @michaelgram.85, head pastry chef Yupin (30 years with Amanpuri), and pastry chef Dad for making it so smooth. Chef Ian @chef_ian_j_t from @amanpuri grilled the bread and topped it with a mash of tender soft olives with anchovies
