My 2019 Christmas cake: a #bûchedenoël in today’s @obsfood: a matcha pistachio genoise using @ohh.industries exquisite tea, with a dark chocolate #halva cream inside, and a white chocolate and mascarpone cream outside, plus a sprinkle of blanched pistachio to finish. Only very gently sweetened so all the flavours are there. Inspired by the balance, delicacy and beauty I see in Japan. Now, what to drink with this?
