above: Clara Canter writes, "Here is a photo of my best small cake, a sort of mini Pastiera Napoletana which I first made for my grandpa's 80th birthday. It was filled with a mixture of ricotta, candied peel and stellette pasta, and the crust had grated lemon rind in it. It was the first time I'd ever made my own pastry, and I was very proud of myself! The recipe was from Marcella Hazan. We didn't have enough pastry left to make the lattice top suggested, and my intricately-stenciled icing sugar pattern sadly dissolved overnight, so I decorated the cake with flowers from my grandma's garden just before we served it. It was all eaten up quickly, and I hope to make it again in a few months time, when my second-year college room will be next to a kitchen with an oven! I adore pastry and would love to read Roger Pizey's book. My student loan doesn't really leave room for non-academic books, so it would be great to win some lighter reading to keep me going in exam term."
above: Natalie Alexopoulos has sent in a picture of a chocolate crackle (well, that's what they're called in Australia) with a trio of easter eggs nestling inside.
above: Claire Brown writes, "These mini cakes were created for The House of Rose and Brown Vintage Boutique in Saltaire village, West Yorkshire. The mini cakes were served at the Vintage Afternoon Tea on the shop's first birthday which was held on Sunday 13th April 2008."
