below: Deborah Cox writes, "This is adapted from a recipe in my husband's grandmother's Be-Ro cookbook, circa 1970. It's not really a muffin - it's actually a fairly dense creamed sponge mixture topped with coconut meringue, flaked almonds and, of course, a cherry on the top. In the orginal recipe it's a tray bake, but it also cooks well in a silicone muffin pan. It has great nostalgic appeal and disappears very fast when served to friends.
