above: Nina Oortman writes, "My favourite small cakes are called "Amerikaner" (Americans) and when I was growing up in Germany in the 80s, these were a must-have for any child's birthday party, whether they were home-made or from the local bakery. I love these cakes, because they have a great fluffy texture, lovely vanilla taste, they are lots of fun to bake (and decorate) and are guaranteed to be adored by both children and grown-ups. As a child, I didn't care much about why they were called "Amerikaner", but when I visited New York City for the first time some years ago, I spotted a very similar kind of small cake – although a lot flatter, bigger and always half icing, half chocolate – in every corner shop and I think they're called "Black-and-white cookies" there. I much prefer making them with different kinds of icing, my favourite being an experimental mix of jam and icing sugar to make pink icing and maybe some hundreds-and-thousands.
above: Fiona Martin sent in this snap of these very lush looking muffins covered in soft white icing, and writes, "I baked these blueberry and lemon muffins for my husband's birthday, and he took this photo (now in pride of place as the background on his phone!). No further comment needed..."
