Apricot Pecan Oat Bars

A great snack bar, perfect for lunchboxes, and easy to adapt to your diet. The point of using cheaper rolled oats is that they’re usually small, broken and powdery, not good for porridge but perfect when you want to hold a mixture together what doesn’t contain very much sugar or hard fat. If you only have jumbo rolled oats try grinding a third of the weight needed in a blender to a powder and combine this with the remaining oats. Get the recipe over on ABC Blueprint for Living
